I love oats & I'm constantly trying new combinations & cooking methods, and this is the recipe I'm currently obsessed with

This oatmeal is kind of like a combination between classic oatmeal & pudding. Personally I like this the most with no solid add-ins

If you refrigerate it overnight, the next morning you can turn it over and have it like a pudding! Choose the amount of liquid based on how thick you want it. I love it both hot & cold!

blend together:
30g oats;
10g pudding powder (~100% cornstarch (e.g. Dr oetker) flavor of choice);
15g protein powder (I have vanilla soy isolate);
5g psyllium husk;
sweetener to taste (I use erythritol);

(+whatever else you want to add. I've done: cocoa powder, vanilla, cinnamon, ground ginger, xmas spice blend, banana…)

Add to:
200-250ml milk (I use soy);
200-250ml water;
Ratio & amount is up to you, depending on how much volume you want. I usually do about 450ml liquid total

Cook at low-medium for a bit to let the dry & wet ingredients incorporate, and then switch to high heat to properly cook the oats and activate the cornstarch, stirring constantly. you'll know it's done when it's become thick and pudding-like, and when it isn't getting any thicker.

There might be some small lumps, you can try to avoid it by sifting the dry ingredients or leaving the oats for longer at low-medium on the stove; but honestly, they're not unpleasant.

The psyllium husk gives it a slightly "jelly" texture, but it isn't overwhelming and I think it works very well with the cornstarch.

    How many cals would a few drops of food coloring add? I could not eat something that shade of pink, but I’m happy it’s tasty and works for you! Idk if the color+jelly texture would be too much for me.

    What’s important is that you like it. A jelly textured oatmeal breakfast isn’t for me.

    The only thing I eat that’s jelly like is Jello.

    That first pic looks a bit like Cream of Wheat to me. Never thought about having it in pudding form. 

    I should add that in the U.S., “pudding” only means a very thick custard, not the more solid kinds of puddings Europeans might have for Christmas, so that’s likely the disconnect. To Americans, a solid gelled dish calls to mind weird 1950s dishes with aspic.

    Guys, you do NOT have to refrigerate it and eat it like a pudding, you can just have a big warm bowl of oatmeal 😭😭😭😭😭 I just also like my pudding 😭
